Parsnip and Apple Puree

Phew, long time no see. Between circulating illnesses within the house and just overall life hecticness, I've neglecting poor little Mush. No longer! Well, at least for a little while.

I decided to post this recipe for two reasons - it was one of P's favourites when she started weaning, as well as the fact that the parsnip is an often ignored vegetable, particularly in the US. Here in the UK parsnips are everywhere it seems. When you go grocery shopping you spot parsnips in the trolleys of many shoppers. Not mine however, unless they are for P. As I've mentioned before, I'm no great lover of vegetables, and parsnips aren't an exception.

Parsnip and Apple Puree

1) Peel the parsnip and cut it into small dice. Cook it in a small pan of boiling water until the pieces are tender. Alternatively, steam.

2) Peel and core the apple and cut it into small pieces. Put it into a small pan with 2 tbsp water and cook until just softened.

3) Blend the parsnip and apple until smooth.

It's that simple. To be honest, I tend to steam everything rather than boil, but that's just me.

Another largely ignored veggie (at least here in the States): rutabaga. I guess it's kinda like a radish-potato combo, and we the grownups never really ate it, but I the kid loves it. It's good, though, and I'm gonna start buying it for all of us.

I usually peel, dice, and boil, then puree and freeze in ice cube trays, then serve 2 cubes sweet potato with one cube rutabaga.

Good point EJW. In the UK it's called "swede", and I have a few recipes which utilise it. I'll make sure to post them at some point so others can be introduced to it as well!

I actually tried this on my own a few weeks ago (bought a parsnip, had no idea what to do with it, tried mixing the puree with applesauce) and it didn't go over great, but I'm thinking the apple-to-parsnip ratio needs to be higher than what I did, so I'm definitely going to try again. Parsnip plus sweet potato puree was a little more successful.

I'd love to get more veggie ideas--BG loves all the orange veg (winter squash, sweet potato) but all our attempts at green (peas, green beans, zucchini, broccoli) have been total failures.
